A Delightful African Delicacy
African delicacy are those foods eaten in Africa and diaspora. There are feasts known to be colorful and lavish. In this article, we would be looking exclusively at how to make three African rice. This would include;
- The Vegetable rice
- The Coconut Rice
- The Fried rice
The Vegetable rice
This a nutritious, nourishing and healthy delicacy you should not miss adding to your diet menu. It is very rich in carbohydrates, iron, proteins and vitamins.
This dish is an appetizing and enjoyed by most people opting for traditional diets.

INGREDIENTS;
3 cups of ice, 6 cups of pumpkin leaves or Spinach- finely sliced, 1 cup of palm oil.1/2 cup of cray fish, Chilli pepper, salt, 2 seasoning cubes, 1onion bulb, 30g dried fish, 500g meat of goat meat. ½ cup shrimp (optional).
METHOD OF PREPARATION
- Wash all the washable ingredients properly.
- Season and boil the meat until it is soft.
- You can fry the meat – this is optional.
- Parboil the rice for 10 mins and wash out the starch
- Add 3 cups of water and the rice to a pot.
- Pour in the broth and put on fire
- Add your palm oil, chilli pepper, onions, salt and crayfish.
- Cook for about 10 minutes.
- Add the shrimp and pumpkin leaves, stir and allow to cook.
- Serve and garnish with your fried meat.
Coconut Rice
This is a famous type of rice prepared in most countries but the local Nigerian style is very tasty and quite easy to prepare. It is very nutritious and delightful. The rice is famous and named for it is made with coconut.

INGREDIENTS;
4 cups of coconut milk, 4 cups of rice, 1 cup of crayfish, cups of hot water, pepper, salt, carrots, meat/fish, 300g dried fish, 1 onion, ½ cup tomato paste- optional, 2 seasoning cubes, 3 cups of prawns / shrimps vegetables.
How to make your coconut milk;
To make your coconut milk, grate the coconut and soak in hot water for 15 minutes, squeeze through with your hands and pass through a sieve and your coconut milk is ready to use.

METHOD OF PREPARATION
- Cook the meat till it is soft. You can fry or grill the meat.
- Parboil the rice for 10 minutes and wash out the starch.
- Put the rice in the pot, add your coconut milk and little water
- Add the broth from the meat
- Add in your chili pepper, tomato past, onions, salt, crayfish and seasoning cubes.
- Add the dried fish after 10 minutes.
- Allow to cook for about 20 minutes.
- When the rice is soft, serve with your fried meat
The Fried rice
This is a very appetizing food mainly because of its looks and colourful vegetables it contains. It is very rich in carbohydrates, proteins and vitamins. It should be fried with small amount of oil in a non-stick pan or a wok for effective results.

INGREDIENTS
1kg chicken (seasoned, cooked or fried), 4 cups of chicken stock, 3 cups of rice, 1 bulb of onions, 2 tablespoon of curry, ½ tablespoon of thyme, salt, chilli pepper, 2 seasoning cubes, 6 cups of vegetables, finely chopped – green peas, runner beans, carrot, red pepper, green pepper, spring onions, onions, sweet corn. 300g Kidney – cooked and diced. 3 tablespoon of vegetable oil, 300g shrimps- optional.
METHOD OF PREPARATION
- Season the chicken very well till it’s soft.
- Pour out the chicken broth and fry the chicken.
- Wash the rice very well with hot water.
- With the stock, cook the rice and the chilli pepper, seasoning cubes, onions, salt. Cook till it is almost soft.
- Share the rice and vegetables in three portions.
- Still and fry each portion in a non-stick pan with a tablespoon of vegetable oil, shrimps, and onions.
- Add salt, seasoning cube and pepper.
- Serve with your chicken.
